Behold beer batch # 6: Three Nipple Triple! This is a recipe with the name from a book we own: Radical Brewing by Randy Mosher. We  pulled from this Belgian Extract + Steeped Grain Recipe. We, Kathe Kington “head brewer” and me, Kim Wolfe “assistant”,  started this batch with the wort boiling on September 26,2009. The Original Gravity (O.G.) taken on this same day was 1090. 15 days later on October 11, 2009, we moved this batch to a secondary fermentation. The second O.G. reading on this day was 1010. If our readings and calculations are correct, we have about a 10.5 % beer? Whoa! The recipe in the book states the average alcohol content is estimated to be between 7.6 to 8.6% so did we misread and miscalculate or did we just mysteriously make a higher alcohol beer??? Who knows but we’re sticking with our calculations. We bottled this home brew beer last Saturday, October 24, 2009 after  13 days in the secondary fermentation. We tasted this batch before we bottled it and “whoa!” is right! This has a very high alcohol taste. Now we just need some carbonation and plenty of time to age. The recommended maturation process for this beer is 3 to 4 months. One of the commonly noted downfalls of brewing your own beer is patience or sometimes lack of! When making any high alcohol beers, expect months to properly allow these beers to age before you can enjoy. We will probably break into one in about a month just to see what it taste like so we can compare the taste at 2 months and then 3 months and then we officially start enjoying the beer if we let is sit longer than 3 months. This beer batch process was pretty glitch free – thank goodness!
